Eu sempre congelava o maracujá batendo rapidamente no liquidificador p/não desmanchar as sementes usando só com um pouquinho de água, depois coava, colocava n/forma de gelo e depois de congelado passava os cubinhos p/sacos plásticos. P/servir só batia os cubos com água gelada suficiente no liquidificador, passava p/uma jarra e servia. Agora acho mais prático (dá menos trabalho) fazer assim:
Abro o maracujá, retiro a polpa inteira, passo p/um potinho de fermento pq toma menos espaço no freezer, ponho uma etiqueta com a quantidade de maracujá usado e levo p/congelar. P/servir retiro do freezer, deixo descongelar só até o ponto de sair com facilidade do potinho, bato rapidamente no liquidificador com água gelada em quantidade a gosto, passo por uma peneira e volto com o líquido p/o liquidificador acrescentando açúcar (ou adoçante) a gosto e cubos de gelo, bato rapidamente, passo p/uma jarra ou garrafa e sirvo.
Dicas:
1- no MODO da forma de gelo fica mais difícil de coar o maracujá, já que coloco só um pouquinho de água. Preparo assim pq caso alguma receita peça só a polpa, é assim que ela está congelada, mas também nesse modo tem a facilidade de poder ser usado em porções de sucos individuais.
2- no MODO do potinho: encho os potinhos com ajuda de uma colher
3- se o maracujá for pequeno e não der p/preencher o potinho, adicione um pouquinho de água, mas sem esquecer de deixar um espaço pq o suco vai expandir depois de congelado

E assim eu tenho maracujá mesmo quando o preço dele está nas alturas. Validade no freezer = 12 meses
aqui as sementes que eu também congelo p/usar posteriormente na decoração de alguma receita
Faço o mesmo com morangos...
Lavo e higienizo bem os morangos, bato no liquidificador e coloco em potinhos de fermento. No caso dos morangos uso o potinho maior.
Validade = 12 meses no freezer
E assim também reutilizo embalagens que geralmente vão p/o lixo
